Job Description
Job Summary
Works with Culinary leadership to research new food products and assist in implementing themed food concepts throughout Universal Orlando Resort and UDX. Formulates and tests new products, researches suppliers, and closely collaborates with creative project teams focusing on the culinary operation of new Food & Beverage outlets.
Major Responsibilities
In collaboration with Universal Creative, plan and design new culinary concepts that meet Universal specifications while fulfilling operational needs. Assist the VP, Exec Chef in developing menu items, plate presentations, and recipes including marquee events. Research market trends to develop innovative menu concepts and review facility design drawings. Provide operational input during design reviews and participate in project scheduling. Partner with Talent Development to train teams on new food and beverage offerings and ensure quality, safety, and HACCP standards are followed.

Scope
Indirectly oversees training and implementation work for Exempt and Non-Exempt teams. Works closely with Universal Creative, Technical Services, Engineering, IT, and Operations groups. Domestic and international travel is required.
Education
Associate’s degree or equivalent required. Culinary arts certificate/degree or apprenticeship is preferred.
Experience
Minimum 5+ years of experience as an R&D Chef or as a Restaurant Chef, Executive Sous Chef, Executive Chef, or Kitchen Manager, or equivalent education and experience.
Certifications, Licenses, Registrations
Chef’s apprentice preferred. Certified Professional Food Manager Certification required.
Additional Information
Exceptional culinary skills with an aptitude for food quality, flavor, recipe development, portion control, plating, and innovation. Must be well-versed in upscale casual market trends, product development science, and sensory evaluation. Ability to work independently or collaboratively to meet deadlines and menu goals.
