As Chef de Cuisine, you’ll bring creativity, precision, and leadership to a kitchen where the food is every bit as impressive as the view.

What Does a Chef De Cuisine Do?

As a Chef De Cuisine, you will effectively manage the day-to-day operation of the kitchen, ensuring the best possible service is provided to all guests. This includes overseeing and training all culinary staff to perform their job duties efficiently. You will establish and maintain effective department procedures and controls, managing staffing levels and scheduling to match business volume while ensuring fairness to staff and following replacement procedures. Your responsibilities also encompass inventory management, ordering all necessary supplies, and preparing daily menus. You will develop new recipes, create special menu items, and ensure all recipes and plated food photos are documented in a recipe binder. Adherence to policies, procedures, and sanitation codes, aiming for 'satisfactory ratings' in all areas, is paramount. You will delegate and execute duties from the Food and Beverage Executive Team, ensuring operations meet resort expectations and standards. Maintaining budgeted food cost while upholding exceptional quality and menu diversity is key. You are expected to promote the establishment, be present in the restaurants to cultivate guest interest, and develop special events to increase return visits. Additionally, you will maintain a working knowledge of F&B Operation’s internal functions, controls, and software updates, communicating pertinent policy changes to employees. Consistently demonstrating outstanding guest service, identifying repeat guests, and monitoring recruitment needs for prospective candidates, in consultation with HR and the Operations Manager, are also part of the role. You will continually oversee, monitor, and delegate F&B operation aspects, including environmental and safety issues, and assist with annual budgets, operating forecasts, and departmental analysis.

Work Experience & Requirements

  • An Associate's Degree in Culinary Arts or a related field is required; a combination of education and experience may be considered.
  • A minimum of at least 6 years of culinary experience.
  • Previous culinary leadership experience in a fine dining establishment.
  • Previous experience in all aspects of a total kitchen operation at a four-five star level is preferred.
  • Strong reading ability for schedules, menus, and policies.
  • Proficient mathematical ability for budgets and payroll.
  • Computer skills including Microsoft Word, Excel, MMS, and Lotus.
  • A valid NYS Driver's license is required for transporting equipment.
  • Ability to speak and understand English, maintaining professional and accurate communication.
  • Excellent written communication skills for standard forms, employee documentation, and data entry.
  • Comfortable working in extreme temperatures (0 to 110 degrees) and under extreme noise.
  • Ability to work a flexible schedule, including nights, weekends, and holidays.
  • Ability to lift up to 75 pounds.
