Restaurant Associates, a leading provider of dining and event catering, is seeking a full-time Garde Manger for Marcel, a new continental restaurant located in the iconic Breuer building on Madison Avenue in New York, NY. Job Summary: Garde Manger

The Garde Manger will learn to assist in the preparation and cooking of various food items, maintaining high food safety and sanitation standards in the preparation and kitchen areas. This role is an excellent opportunity to develop skills in an upscale dining environment.

Essential Duties and Responsibilities

  • Learns to estimate food requirements from menus and manage food procurement.
  • Prepares and cooks food following company production records and standardized recipes.
  • Learns to adjust thermostat controls for various cooking equipment (ovens, broilers, grills, roasters, steam kettles).
  • Measures and mixes ingredients according to recipes, utilizing diverse kitchen utensils and equipment.
  • Bakes, roasts, broils, and steams meats, fish, vegetables, and other foods under guidance.
  • Adds seasoning to food during mixing or cooking, under instruction.
  • Tests food for doneness by tasting, smelling, and piercing.
  • Carves meat, portions food, and garnishes dishes as directed to fulfill orders.
  • Washes, peels, cuts, and shreds fruits and vegetables.
  • Butchers chicken, fish, and shellfish as directed.
  • Bakes bread, rolls, cakes, and pastry as part of training.
  • Maintains a clean work area and equipment.
  • Adheres to sanitation and safety principles in food and equipment handling.
  • Interacts courteously and efficiently with customers and coworkers.
  • Ensures compliance with company service standards and inventory/cash control procedures.
  • Performs other assigned duties.
