As the Executive Chef Remy/Enchanté, you will be leading all aspects of all culinary operations, menu planning, food preparation and kitchen management to ensure outstanding dining experiences for our guests.

You will report to the Hotel Director.

Responsibilities

How You Will Make a Difference

  • Provide the culinary vision that encourages and motivates Remy/Enchanté galley and service staff to deliver an outstanding dining experience, recognized by industry peers
  • Train, develop and empower team to deliver top quality product and service standards through hands on leadership
  • Promote creativity, innovative production, cost control, and revenues
  • Coordinate all food offering including group offerings and special requests
  • Create new flavor experiences by being innovative with food combinations, textures and flavors that inspire an innovative culinary experience
  • Supervise all Culinary standards in Remy restaurant
  • Meet food cost budgets and targets as set by the Food Manager onboard
  • Complete daily tastings to ensure consistency in quality and presentation at world class level
  • Expedite and provide final quality control of all food items served
  • Maintain all applicable USPH and HACCP standards in the Remy galley
  • Maintain facilities and equipment
  • Facilitate inventory control (par levels turnover and replenishment)
  • Oversee allergy and dietary training of galley staff and ensure training is in accordance with strict company LOG’s and guidelines
  • Expected to have visibility on the Dining Room floor and have daily guest interaction

Basic Qualifications

What You Will Bring to the Team

  • Minimum five years leadership experience within fine dining food operation; equivalency of 1 star Michelin or greater
  • Excellent understanding of food and beverage products, services, and equipment in fine dining establishment
  • Strong Western/European fine dining training and skills
  • Excellent written and verbal communication skills
  • Ability to calculate and control cost potentials/projections and understands the impact on budget
  • Ability to propose, write and implement menus of high quality based on theme and seasonal availability
  • Ability to write and cost recipes and train the team to implement them at the highest standards

Preferred Qualifications

How You Will Stand Out

  • College education or proven experience preferred
  • Certified working Chef or equivalent degree in Culinary Arts
  • Nationally or internationally recognized throughout regular media a plus

Additional Information

This is a SHIPBOARD role.

You must:

  • Be genuinely interested in a career at sea and willing to live and work onboard a Disney Cruise Line vessel
  • Be willing to follow and perform safety role, emergency responsibilities, and associated responsibilities as specified in the ship Assembly Plan
  • Be willing to uphold the general safety management responsibilities as specified in the Safety Management System in areas and operations under their control
  • If applicable, be willing to share a confined cabin with other crew members and appreciative of working and living in a multicultural environment that has strict rules and regulations

Your Responsibilities:

  • Have a valid passport and C1/D Seaman's visa (DCL will provide you with documents to obtain this)
  • Complete a pre-employment medical
  • Obtain a criminal background check
  • Bring approved work shoes

Disney Cruise Line is a drug-free workplace. All new hires are required to undergo drug/alcohol testing within the first week onboard and throughout their contracts. Failure to pass the drug/alcohol testing will result in immediate termination.
