As the Chef Patissier Remy/Enchanté for Remy/Enchante, you will provide the culinary vision that encourages and motivates Remy/Enchante pastry team to deliver an outstanding dining experience, through innovation and creativeness.

You will report to the Executive Chef Remy/Enchante.

Responsibilities: How You Will Make a Difference

  • Train and develop team members to produce top quality product and service standards through hands on leadership
  • Responsible for promoting outstanding product, innovative production, cost/inventory control, and revenues
  • Coordinate all Remy pastry and bakery offerings and special requests
  • Craft new flavor experiences by being innovative with food combinations, textures and flavors that encourage a brand new culinary experience
  • Develop a strategy to exceed Guest’s expectations and needs
  • Lead pastry and bakery culinary standards in Remy/Enchante
  • Expediting and final quality control of all pastry / bakery offerings served
  • Ensure Disney Cruise Line and USPH Sanitation requirements are met in his / her area of responsibility
  • Complete personal random food and menu audits
  • Monitor handling, maintenance, and reordering of operating equipment

Basic Qualifications: What You Will Bring to the Team

  • Minimum four years leadership experience within fine dining Patisserie; equivalency of 1 star Michelin or greater
  • Strong Western / European fine dining training and skills
  • Excellent understanding of food and beverage products, services, and equipment
  • Articulate written and verbal skills
  • Proficiency in calculating and identifying control cost potentials/projections and understanding the impact on budget
  • Ability to propose, write and implement menus of high quality based on theme and seasonal availability
  • Ability to write and cost recipes and train the team to implement them at the highest standards

Preferred Qualifications: How You Will Stand Out

  • Executive Pastry Chef (CEPC) certification
  • Prior ship experience

Additional Information: This is a SHIPBOARD role.

You must:

  • Be genuinely interested in a career at sea and willing to live and work onboard a Disney Cruise Line vessel
  • Be willing to follow and perform safety role, emergency responsibilities, and associated responsibilities as specified in the ship Assembly Plan
  • Be willing to uphold the general safety management responsibilities as specified in the Safety Management System in areas and operations under their control
  • If applicable, be willing to share a confined cabin with other crew members and appreciative of working and living in a multicultural environment that has strict rules and regulations

Your Responsibilities:

  • Have a valid passport and C1/D Seaman's visa (DCL will provide you with documents to obtain this)
  • Complete a pre-employment medical
  • Obtain a criminal background check
  • Bring approved work shoes

Disney Cruise Line is a drug-free workplace. All new hires are required to undergo drug/alcohol testing within the first week onboard and throughout their contracts. Failure to pass the drug/alcohol testing will result in immediate termination.
