Job Summary
As a Sous Chef, you will play a crucial role in preparing and cooking a variety of foods, assisting the Executive Chef, and coordinating the activities of a dedicated team of cooks and food-service associates. This position involves taking responsibility for kitchen operations and staff in the absence of the Executive Chef, ensuring high standards of culinary excellence and operational efficiency at Western Washington University.
Essential Duties and Responsibilities
- Cooks and prepares food according to approved recipes and production standards, ensuring all deadlines are met based on production orders.
- Supervises hourly food service associates, including interviewing, scheduling, payroll management, training, counseling, participating in performance reviews, and recommending disciplinary action as appropriate.
- Stores food in designated areas, strictly adhering to all corporate, state, and federal food safety and sanitation procedures.
- Ensures proper food handling, appealing presentation, accurate portion control, and maintenance of appropriate serving temperatures.
- Maintains the sanitation of all equipment, supplies, and utensils, thoroughly cleaning workstations before departure.
- Keeps display equipment clean and free of debris during meal service to comply with all sanitation, safety, production, and merchandising requirements.
- Interacts with customers to resolve complaints in a friendly, service-oriented manner, relaying relevant information directly to the supervisor.
- Demonstrates a complete understanding of daily menu items and accurately explains them to associates and customers.
- Manages operations effectively during peak production and service hours.
- Monitors inventory and deliveries of products and supplies, tracking product production, consumption, and waste. Informs the supervisor when supplies or product levels are low.
- Performs other duties as assigned to support kitchen operations.
