Pizza Chef
Big Mamma is a French-Italian restaurant group, created by Victor Lugger and Tigrane Seydoux. For 9 years, we have opened the doors of 25 restaurants in Europe (France, Monaco, England, Spain, Germany, and Italy).
Our mission? To share the unique atmosphere of the finest Italian traditions, creating unforgettable moments of sharing with our customers.
Your Responsibilities:
- Work within a brigade where you will be trained in all the fundamentals of the pizza-making profession.
- Manage your priorities and communicate effectively with the rest of the team in a dynamic environment.
- Be autonomous and adopt the right reflexes during preparation, mise en place, and service phases (adherence to technical sheets, stock verification, waste reduction, etc.).
- Knowledge of wood-fired oven cooking techniques and oven management/maintenance (lighting, cleaning, temperature control).
- Knowledge of different types of pizza dough preparation techniques.
